Super Easy One Pound Meals.....

If you are an Instagram addict like me, you may have heard of Miguel Barclay.

Miguel has been posting videos on Youtube and Instagram for a few years now, and is famous for creating delicious, yet simple recipes, guessed it, cost £1 per person.

I saw on his Instagram that his Super Easy One Pound Meals was on offer on Amazon for half price so I thought I would give it a go, especially as my other half sometimes works away so why waste food if I can make tasty meals on the cheap.

Now, I am sometimes a sceptic when it comes to cook books or recipes online - I am looking at you Jamie Oliver - 30 minute meals that take hours of preparation and you need to have those 'normal' cupboard essentials like saphron and rice wine vinegar *face palm*! So I was pleasantly surprised that in the whole of Miguel's cook book, the only thing I didn't have to hand was sesame oil (which I am now addicted to by the way). So if you have garlic, salt, pepper and olive oil, you are pretty much ready to go.

I would say 99% of his recipes have less than 10 items, some as little as 5 items! Which makes it great for me as I don't have a car. so I don't want to be dragging half of the supermarket home. I have had many evenings dragging bags full of ingredients home after work , I can tell you, it's not a fun experience.

I thought I would share some of my successes, they may not look like Miguels amazing pictures, but bloody hell they tasted good!

*Disclaimer - I have added a few extra ingredients if I had something leftover in the fridge - like the half a pepper you will never, use or greens*

The dish pictured below is one of my favourites so I thought I would share the ingredients to give you an idea as to what you need to cook up one of his delicious meals!

  • A few slices of chorizo
  • 1/4 red onion
  • 100g of cannellini beans
  • 50g of passata
  • Cumin
  • Paprika
  • 1tbsp of tomato ketchup (I used puree as I didn't have ketchup
  • Olive oil
  • Salt and pepper

All of these ingredients can be used again in other recipes if you are just cooking for one. A lot of his recipes include beans of some sort which I find a simple, cost effective and filling alternative to potatoes/pasta.



I am really impressed with his recipes and once I have tried out the rest of the book I will definitely purchase another from his One Pound range.
